Observed grilled chicken, chopped sausage, containers of salad mix, containers of proportioned spaghetti noodles, and 3 containers containing marinara sauce and marinara meat sauce out of cold holding temperature in walk in cooler (see temperature chart). Observed internal thermometer reading of walk in cooler at 46F. PIC shown daily log of internal walk in cooler reading and cooler read 39F at 10am. CDI-PIC opened walk in freezer to allow air flow into walk in cooler as well as moved out of temp items into walk in freezer and used ice wands in marinara sauces for rapid cooling. All TCS items reached 41F or below within one hour and walk in cooler internal temperature read 39.9F. |
