The PIC stated that one of their coworkers had the digital food thermometer on his persons when leaving for a meeting this morning. Food thermometers or other food temperature measuring devices shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperatures as specified in the NC food code. The officer sent a picture (via text) showing the food thermometer during the inspection. The REHS told the PIC that the food thermometer should be left on the food truck at all times. CDI
48 0.50 Warewashing facilities: installed, maintained & used; test strips Yes No No 4-302.14 Sanitizing Solutions, Testing Devices (Pf) The food truck uses bleach sanitizer for sanitizing its dishes, but no chlorine sanitizer test strips were provided during the inspection. The food truck only had QUAT/QAC sanitizer test strips. Sanitizer test strips or other test kit that accurately measures the concentration of sanitizing solutions shall be provided. The REHS provided a strand of their own chlorine sanitizer test strips to the PIC until the food truck could obtain its own. CDI
