General CommentsInspection conducted by intern Zach Holtsclaw under guidance of EHS Paul Miller (#3468). Overall neat and clean kitchen. Staff are polite and professional!

Pf(B) The FOOD-CONTACT SURFACES of cooking EQUIPMENT and pans shall be kept free of encrusted grease deposits and other soil accumulations. EHS observed some utensils with food debris build up. CDI: PIC voluntarily rewashed. Some of the residues left on cleaned dishes were excessive white, powdery residues. This might be an issue with the rinse aide.

EHS observed food items being cooled that were not loosely covered. CDI: PIC voluntarily uncovered them. Guiding EHS will provide educational documents on cooling TCS foods during exit interview.

Guiding EHS observed a severely dented funnel. EHS educated PIC on discarding and replacing damaged dishes and utensils. PIC voluntarily discarded the funnel. CDI.
