General CommentsThis inspection was conducted by Sean White REHS 2539. This inspection was conducted while students were on spring break and very little food was being prepared.

All mechanical dishwashers that use hot water as a sanitizer must have them reach a temperature of atleast 160F. Until the machine is repaired, the 3 compartment sink (all 3 vats) will serve as sanitizing vats. CDI 4-601.11 (A) Equipment, Food-Contact Surfaces, Nonfood Contact Surfaces, and Utensils (Pf): Observed a couple of tongs with minor build up. Observed the can opener with moderate build up. All food contact surfaces must be clean to sight and touch. The ware items were taken to be washed, rinsed, and sanitized. CDI
