Had raw shell eggs stored over lunch meat (lunch meat was in a plastic container. Also had ground beef stored over lettuce in back cooler, ground beef was wrapped in pastic. Always make sure to keep these items stored according to cook temps. CDI- moved and education.

Make sure to keep your prep unit top trays from being stacked to high. Had tomatoes 46 and cheese at 51 in the top of the prep cooler. Both of these items were moved down low to cool down to 41 degrees.
