plastic containers of precook bbq in walkin cooler was not date marked. PIC didn't know how long the bbq had been removed from original package and placed in plastic containers to be heated for hot hold.
Ziploc bags of yellow soft cheese and provolone cheese in walkin were also not date marked.
if keeping over 24 hours shall date mark and be used with 7 days
