2-301.14 After engaging in activities that contaminate the hands, food employees must wash their hands. P Overall hand washing is very good as to when employees are washing hands. EHS did observe 2 employees that used clean hands to turn off water and turn off water with unused paper towel before drying hands. Manager corrected employees who did use the correct method of turning water off with used paper towel after drying hands. Review with all employees correct technique to ensure there is a clear understanding. No points taken. CDI |

4-903.11 Store cleaned equipment, utensils, linens, and packages in a clean, dry location and at least 6 inches off the floor. The clean utensils such as spoons, ladles, and spatulas are being stored on hooks over 3 compartment sink. Dirty utensils were piled especially high in sink and a collander was coming in contact with clean utensils. Manager put all utensils in sink to be cleaned. EHS suggested storing them in a container on shelves with clean utensils. CDI |

4-602.13 Non-food contact surfaces of equipment shall be cleaned at a frequency to prevent the accumulation of soil residue. Clean derive thru soda fountain behind the nozzles on the main body of soda fountain. There is a groove that runs at top of nozzle box that is moldy from soda splash. EHS did show this to the manager. Clean back storage shelves with clean utensils. Nopo points taken. |
