General CommentsEHS observed some items that had completed cooking process being held out at ambient air or sitting on range top with no heat. PIC stated these items were meant to be placed at steam table to be held on 4 hour TPHC. EHS observed items dropping in temperature, with some getting very close to 135F. EHS educated PIC on not removing them from the heat and keeping these items at 135F or above and to ensure that TPHC is starting at 135F or above. During time of inspection, most employees had left to allow EHS to complete inspection. EHS observed multiple employees going in and out of back door (additional WIC and storage is outside) with gloves on, however, no employees returned to food prep during the time EHS was present. EHS reminded PIC and staff to ensure that gloves are being changed and hands washed any time when they are coming in and out of the back door. EHS educated PIC on proper cooling methods, including ensuring not to use cold drawers during cooling process.
