4-101.11 (A) - (E ) Food contact surfaces shall be (A) Safe P, (B) Durable, Corrosion-Resistant, (C ) sufficient in weight and thickness to withstand repeated washing (D) Smooth and easily cleanable, and (E) Resistant to damage. Observed several large pieces of cardboard in the reach in, they are sitting on top of the shelf. FE explained they do that to keep the bottles from falling. EHS explained they need a material that can be cleaned.
4-501.11 Maintain equipment in good repair. Observed a vent fan cover in the WIF that is loose and hanging. Needs to be reattached. Observed small reach in with water pooling in the bottom. |
