General CommentsManager stated that per company standards they are to have a cup of sanitizer (in the metal cup) on the line to dip the spoons into after making a drink. Spoons are used throughout the day, during service for drinks. During the busy times, the spoons will not have time to dry before using. EHS advised manager to discontinue process for spoons due to the lack of drying time before use. EHS observed process and saw spoon residing in metal cup of “sanitizer” (manager was not sure if it was sanitizer or water they had used at the time. It was dumped before it was known we could find out if it was sanitizer or water. The cup was labeled sanitizer). Employee grabbed spoon from the cup of sanitizer or water and made a drink. Spoon was not dried. Manager stated that the employee used water but sanitizer was supposed to be in the cup. Per 4-901.11(A) Air dry equipment and utensils after cleaning and sanitizing. Utensils must be air dried after sanitizing to reduce the rick of sanitizer being mixing into customer drinks. EHS noticed household use bug spray in facility. Manager stated that it was here prior to her coming, however she has seen an increase in pest activity. Facility uses the Bug Out company for pest control. Increase frequency of pest control to ensure that facility is free of pests.
