22 3 Proper cold holding temperatures Yes Yes No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P -Observed caramelized onions, roasted tomatoes, burrata, date jam, plant-based chorizo, and jack cheese above 41F in prep unit across from flat top grill. The only foods above 41F (listed above) were stored on left side of prep unit flip top, located closest to the flat top grill. Observed all other foods (on right side of flip top and underneath in prep unit lowboy) properly cold holding at or below 41F. Prep unit is working properly, yet temperatures likely rose above 41F due to constant use of hot grill during breakfast rush. Foods have been above 41F for less than 4 hours. -CDI- PIC placed ice baths underneath the onions, tomatoes, burrata, date jam, plant-based chorizo, and jack cheese to rapidly cool to 41F or below. By end of inspection, EHS observed all TCS foods reach 41F within 4 hours. -PIC and EHS discussed using ice baths throughout the day on the items listed above, to ensure proper cold holding, regardless of flat top grill use.
