3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed cut raw beef and cooked tofu cooling n flip top at cookline for more than two hours. Per PIC, foods were prepared this morning around 11:40A. Observed stacked curry sauced cooling in WI with lids in place. CDI - Facility is currently under a risk control plan for cooling and cooling methods. Maintain records and submit to EHS as required. -1- REPEAT
