3-501.19 (A) (1) Written procedures for Time as a Public Health Control shall be prepared in advance, maintained in the establishment, and made available for the Health Department upon request. Written TPHC procedures must specify methods of compliance with 3-501.19 (B) or (C). -Pf. TPHC procedure template may be found at: http://meck.co/FoodSafety. Observed facility using fried chicken and fried tofu on time procedures but no start and end time stamp. PIC stated that all food items on time are held from 11am until 3pm during the first shift. CDI-PIC placed correct time stamp for items starting at 11am. -REPEAT VIOLATION- No point escalation due to noticeable improvement and all other TPHC items were properly labeled with start and end times. |
