3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P REPEAT. Observed several items in prep top unit (pork belly, bean spouts, fish cakes, eggs) and in reach-in unit (fish cakes, eggs) dated with the day the items were portioned out. Items must be dated with the day they were cooked or opened from package/bag/can. CDI - Labels were corrected. |
