The REHS stopped the employee and had her wash her hands during the inspection. CDI

All time/temperature control for safety foods under cold holding shall be maintained at 41F or less. The REHS placed their thermometer inside of the refrigerator, and an air reading of 49F was observed. The REHS had the restaurant's staff relocate all of the cold foods into the restaurant's walk-in cooler during the inspection. A verification visit will be made between the date of this inspection and March 13, 2026 to ensure that any cold holding foods being held inside of the refrigerator are being kept at 41F. VR
33 0.50 Proper cooling methods used; adequate equipment for temperature control No No Yes 4-301.11 Cooling, Heating, and Holding Capacities - Equipment (Pf) All of the cold holding foods temped inside of the kitchen refrigerator had temperatures above 41F during today's inspection. The REHS placed their thermometer inside of the refrigerator, and an air temperature of 49F was registered. Equipment for holding cold foods shall be sufficient in number and capacity to maintain the temperatures of the food at 41F or less. The REHS had the restaurant's staff relocate the food into the walk-in cooler during the inspection. A verification visit will be made between the date of this inspection and March 20, 2026 to ensure that the refrigerator is properly maintaining food temperatures at 41F. VR
