Observed raw seasoned pork chops stored in back row of cold holding drawers, directly behind ready to eat foods like provolone cheese and red peppers. Current storage of pork chops has potential to contaminate ready to eat foods stored in front rows. CDI- drawers re-organized, no longer a contamination concern. REPEAT. |

3-304.14(B) Hold in-use wiping cloths in properly concentrated sanitizer between uses. Observed 1x sanitizer bucket at 0ppm quat sanitizer when tested. EHS observed all other sanitizer buckets at proper concentration, no issues with the dispenser. CDI- bucket remade to proper concentration. |
