Observed general Tso chicken, wings, garlic sauce, shrimp sauce, boiled chicken strips, Napa cabbage, raw shrimp, raw chicken, cooked shrimp, lo main noodles, and sauces in prep top and reach in above 41F. One of reach in units at 50F. Verification required. Observed all TCS items in walk in unit above 41F except for noodles. Walk in unit went from 50-42F ambient air for holding. Raw chicken batches only dropped 7 degrees while in walk in for almost an hour. CDI items that are able to move to freezer and remaining items tossed. PIC decided to voluntarily close until refrigeration repaired. PIC stated that they turned off AC unit to save money. Unable to turn back off because thermostat was removed and need new batteries. Verification required. |
