Employee washed, turned water off with clean hands, and used a towel on apron belt to dry hands. EHS spoke to owner and also explained to employee a correct hand wash. Remember to use paper towel after drying hands to turn off the water. No points taken this time. CDI
33 0.50 Proper cooling methods used; adequate equipment for temperature control No No No 3-501.15 Quickly cool foods. Use open/vented shallow pans, large ice baths, and active stirring methods. Cold air must flow around the product to remove the heat. Pf EHS found cooked mixed vegetables in 2 door cooler at 49°F. Manager was asked why these would be this warm. They had been cooked this morning, put in a 6 inch container in the freezer. They were then moved to the cooler. It was getting at the end of the 6 hour mark for them to reach 41°F. It was about 5 and half hours when found. EHS explained vegetables need to be spread out in a pan no more than 4 inches deep. If they are to be put back into a deeper container, they must be checked with a thermometer to be sure they are at 41°F. Vegetables were put back on the stove anfd reheated to 176°F. CDI
49 0 Non-food contact surfaces clean No No No 4-602.13 Non-food contact surfaces of equipment shall be cleaned at a frequency to prevent the accumulation of soil residue. Clean insides of fryers where grease is emptied. Clean bottom on inside of 2 door freezer. No points taken.

Clean floor behind the stove and under fryers. . Clean filters in hood. Clean floor in can wash( mop pit). 6-501.11 Physical facilities shall be maintained in good repair. Back wall in ladies toilet room is begiining to bubble under paint probaly due to moisture. Paint is chalky and comes off to the touch. This needs to be repaired.
