The sanitizer solution for the wiping cloths were not registering correctly. Operator remade sanitizer buckets. CDI.
44 0.50 Utensils, equipment & linens: properly stored, dried & handled No No No 4-901.11 Equipment and Utensils, Air-Drying Required (C) After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining and may not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. Some of the dishes throughout was observed wet stacked. Operator restacked dishes in order to properly air dry.
47 0 Equipment, food & non-food contact surfaces approved, cleanable, properly designed, constructed & used No No No COMMENT 4-501.12 Cutting Surfaces (C) Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced. A couple of cutting boards were observed heavily scorched with brown residue. Operator removed the cutting boards during inspection. CDI.
49 0.50 Non-food contact surfaces clean No No No 4-602.13 Nonfood Contact Surfaces (C) Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue and other debris and cleaned at a frequency necessary to preclude the accumulation of such soil residues. A dead insect was observed in the cabinet in the serve room and shall be cleaned out. Equipment under the hood shall be cleaned due to buildup. The conatiner used for utelsils shall be cleaned.Label/sticker residue was observed on pans and shall be removed. After removing the residue, they shall be washed, rinsed, and sanitized.
