3-304.14 - Wiping Cloths, Use Limitation: Observed a sanitizer bucket at the blanched fries area that was reading at 0ppm during time of inspection. Hold in-use wiping cloths in sanitizer between uses, and at a concentration recommended by the manufacturer.
CDI. The bucket was dumped and the PIC spoke with the kitchen staff about not placing too many towels into one sanitizer bucket. New sanitizer was dispensed and it was reading at the correct concentration. |
