General Comments-EHS observed employee washing hands between handling soiled and cleaned equipment at the warewashing station. Food employees on the cookline were observed properly washing hands when switching tasks. PIC revised his SOPs for handling raw animal product: thongs are labeled and stored individually on plates for use while contacting raw meats; switched every 2 hours. -Additives include: tartar powder, xanthum and tapioca [all GRAS]. -PIC shared his TPHC procedures for unsalted butter [held for 4 hours and discarded]; discard time was stamped on container. -PIC revised his SOPs for preparing burratta mozerella: held in cooler on a rack to drained then stored in bulk containers. -Documents for undercooked seafood reviewed [letter, tags]; tags are organized in chronological order and last date sold is visible]. -Sanitizer is being stored off the floor. -Roasts [when served] are for special events [immediate service].
