General CommentsTPHC procedures were updated to the newest form today. Curry added to the TPHC procedures today. EHS and PIC discussed food defense and security as it relates to outside walk ins and dry storage. Ensure these areas remain locked when not in use. NOTE: Spray arm for sink is just above the flood rim of the 3-comp. EHS advises to ensure spray arm is raised by adding a new spring or other method prior to it becoming a backflow issue. Spray arm should be above the flood rim with a gap to ensure no back siphonage. Facility did not increase deliveries, however decreased the amount of product per delivery and the chef now goes to restaurant depot or chef store between deliveries to ensure coolers are not overstocked.
