General CommentsEnsure that TCS TPHC items are clearly indicated and discarded after time hold. EHS observed items in display case that were being held on time but PIC stated some items had been leftover from the weekend, these items were non TCS items. EHS observed 3 options on TPHC sheet: sold out, discarded, and other. EHSE observed “other” had been filled in for some items. Facility maintains cold holding log and TPHC log. Ensure TPHC log is accurate and clearly indicates which items are held on time with appropriate time stamps. If any items are kept over 4hours, ensure that they are checked to ensure temperature has not exceeded 70F and temperature is recorded at 4 hour mark. Facility was in closing process while EHS was present and all TPHC items were discarded.
