4-602.11 Frequency - Equipment Food-Contact Surfaces and Utensils. Priority (P)
Equipment food-contact surfaces and utensils shall be cleaned at any time during the operation when contamination may have occurred. Surfaces of utensils and equipment contacting food that is not time/temperature control for safety (TCS) food such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, beverage dispensing lines or tubes shall be cleaned at a frequency necessary to preclude accumulation of soil or mold.
The following was observed: the ice machine and surrounding areas of the drink nozzles were soiled; clear food containers, metal lids, metal bowls, ladles, scoops, tongs, and spatulas stored in the clean dish area were soiled; and a meat slicer and mixer bowl, described by the person in charge (PIC) as not having been used for several months, were soiled with food debris.
Corrected during the inspection (CDI): The affected food containers and utensils were rewashed, rinsed, and sanitized during the inspection. Per the PIC, the mixer stand and meat slicer will be cleaned and covered before being returned to storage. |

Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded when held at a temperature 41F or less for a maximum of 7 days. The day of preparation shall be counted as Day 1.
The following items were observed without date marking: cut pineapple chunks, cut melon pieces, turkey and ham deli meat, and containers of mashed potatoes and gravy.

It was observed that an unlabeled bottle containing an unknown chemical was stored near the prep sink to the right of the beverage machine. Also, two green buckets containing sanitizing solution near the same prep sink were not labeled.
CDI: The PIC voluntarily discarded the unlabeled bottle and correctly labeled the two green buckets. |
