General CommentsDuring inspection EHS observed that facility is holding all in-use products on the line (including expo) on Time as a Public Health Control (TPHC). EHS and PIC discussed at length the procedures surrounding the use of TPHC. PIC was knowledgeable about the process. EHS provided PIC with the County TPHC form so that all products could be added, facility procedures for not include specific items (referenced ‘proteins’). EHS advised PIC of complication that can arise from holding entire line of TPHC. EHS will continue to evaluate this process during future insepctions and if violation are noted facility may be required to reduce the amount of items being held on TPHC. Facility is required to maintain equipment even if TPHC is being used.
