3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P. Observed beef empanadas in freezer dated 7-27. PIC stated that beef was cooked on 7-26 and empanadas were prepped on 7-27. EHS reminded PIC that empanadas should be dated with cook date, freeze date, and a thaw date when removed from the freezer to be thawed. REPEAT. CDI - PIC corrected date marks. No point escalation due to improvement.

6-501.112 Remove dead or trapped birds, insects, rodents, and other pests. Observed fly trap with flies above prep table. No prep was occurring and no contamination was observed. CDI - PIC discarded trap and stated that traps will not be placed above food prep areas or food/equipment storage areas. |
