33 0.50 Proper cooling methods used; adequate equipment for temperature control Yes No No 3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf. Observed Ham (WIC), turkey (WIC), and tomatoes (RI) that had been cooling for 3 hours at 43F, 44F, 46F with lids on the ham and turkey and plastic wrap covering the tomatoes. CDI-PIC moved foods to rapidly cool in the WIF and all foods reached 41F or below. EHS suggested to PIC to allow cooling foods to cool without lids or plastic wrappings until after they reach 41F to allow that room temperature air to escape during the prepping process.
