3-501.19 Time as a Public Health Control (Pf). All items held in the top of the flip top make unit are held on time. Written TPHC procedures not available during inspection. If time without temperature control is used as the public health control for a working supply of time/temperature control for safety food, written procedures shall be prepared in advance, maintained in the food establishment and made available to the regulatory authority upon request. CDI: Provided a copy of the TPHC procedure fillable handout and aided the person-in-charge in filling out handout. |
