3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed bleu cheese, cheddar cheese, american cheese, lettuce, raw eggs, and cut cabbage holding above 45F. All items were high stacked in flip top containers. CDI - Top half of product out of temperature was discarded.
Observed dressings in squeeze bottles holding at 45F. EHS recommended keeping bottles in underneath portion, as they are too tall to hold 41F in flip top unit.
