4-501.114 Maintain sanitizer at correct concentrations when being used to sanitize. -P Observed sanitizer bottle was empty at the dish machine. Dish machine was testing 0ppm chlorine. Facility was washing dishes in the dish machine upon arrival. CDI: Chemical bottle replaced. PIC did not prime machine, so items were still not properly sanitized. PIC was shown how to prime machine and shown why if it is not primed, there is no sanitizer in the water. Machine was primed and then machine tested at 100ppm chlorine.
