3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf. Observed mortadella prepared Monday was not date marked. Observed label had fallen off one ROP package of beef steaks - others were labeled properly. CDI allowed PIC to replace label on ROP beef and to label mortadella with date it was cooked according to cooking log. |

3-304.14(B) Hold in-use wiping cloths in sanitizer between uses. Observed sanitizer buckets holding damp wiping cloths were filled with sanitizer measuring 0 ppm quat. PIC checked dispenser and found bucket of concentrate had run dry. CDI -PIC replaced concentrate and refilled buckets with quat sanitizer measuring 200 ppm. None of the sanitizer was in use this afternoon for sanitizing dishes. REPEAT |
