4-601.11(C )/4-602.13 Keep the equipment clean to avoid build up of dust, food residue or debris. Observed exterior surfaces of cooking equipment stored on truck showed build up of grease and burned on debris, especially oven and surrounding areas. Hood looked clean today.
Inspection was conducted at the commissary while PIC was operating both in the commissary kitchen and loading truck for use later today. |
