Observed Boxcar Cottonbell cheese in display with 7 day date marking expired 6/26. Observed two packages of Ca De Ambros Taleggio WIC opened re-wrapped with prep date of 6/20 and 5/10 but no expiration date marked - products expired. Observed Boxcar Campo cheese with open prepped date of 6/5 and no expiration date - no documentation available in establishment to determine if this semi-soft cheese is date mark exempt. CDI - cheeses without date marking or with expired date marking discarded. Provide specifications on moisture content from manufacturers for cheeses which are prepared/cut in house. |
