General CommentsEstablishment is currently cooking and cooling the following items: sausage gravy, chili, grits. No additional items can be cooked and cooled. Steam table has been removed from the grab and go area of the mini mart to the kitchen area. New bun warmer, steam well, cold well, and hot dog roller have added to the mini mart area. PIC states these items will not be used until approval from the Department has been issued. Establishment has variance for lack of dumpster pad. Variance paperwork available on site.

Based on conversation with food employee. Several TCS items are cooked, cooled, frozen, then thawed on different days. Thaw dates will need to be written on these items to ensure date marking and hold time does not exceed 7 days with the date prepped as day one. All items that were held past seven days noted above were not items that are frozen and thawed.
