4-901.11(A) - Equipment and Utensils, Air-Drying Required: Air dry equipment and utensils after cleaning and sanitizing.
During inspection a few of the green fruit trays were found stacked up wet on the main dish rack. CDI by having PIC rearrange the wet trays to finish air drying before stacking. It is recommended to get another of the drying racks like on the bottom shelf for the excess trays. |
