A container of vegetable oil was being stored uncovered on the back dough prep table and was not being actively used. Food shall be protected from cross contamination by storing the food in covered containers, packages, or wrappings. The manager placed a lid on the container of vegetable oil during the inspection. 3-304.15 (A) Gloves, Use Limitation (P)
A food employee was observed wiping the front pizza prep counter with a sanitizer cloth and proceeded to grab a pizza pan out of the front reach-in cooler without changing out his gloves in between. If used, single-use gloves shall be used for only one task, used for no other purpose, and discarded when damaged or soiled or when interruptions occur in the operation. The REHS stopped the employee and had him wash his hands and change out his gloves. CDI |

Several of the soda nozzles at the dining room beverage station had purple/black residue on the inside of them. The surfaces of equipment that contact non-TCS foods (such as beverage dispensing nozzles) shall be cleaned at a frequency necessary to preclude the formation of soil or mold. The restaurant’s QUAT sanitizer test strips expired in November 2025, and the restaurant was unable to provide any current test strips. Sanitizer test strips or other testing device that accurately measures the concentration of sanitizing solutions shall be provided. The REHS provided a strand of their own QUAT sanitizer test strips to the manager until the restaurant could obtain its own. CDI |
