Observed recently sliced ham and salami cooling in sandwich station prep top cooler while individually bagged and zipped. Also observed large container of tuna salad cooling in the display case. CDI-PIC placed all items in walk in cooler for rapid cooling and REHS educated PIC that display cases and prep top coolers are not designed to cool items, only to cold hold items. -REPETA VIOLATION-
