Observed several metal and plastic pans with sticker labels and sticker residue still on them but stored as clean. Also observed several metal pans and black plastic plates soiled with food debris but stored as clean. CDI - Items sent back for rewashing. |

3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P REPEAT. Observed cream cheese and sundried tomato pesto dated 1/30-2/6, shredded mozzarella cheese dated 1/14-1/30. Also observed sliced tomatoes, opened bag of meatballs, opened bag of cut lettuce, and sliced roast beef without datemarking. CDI - Cream cheese and pesto labels corrected, shredded mozzarella voluntarily discarded. Sliced tomatoes, meatballs, and roast beef labeled. Cut lettuce voluntarily discarded.
