PIC willingly discarded foods that had been left in unit over night and were out of temperature. Location is going to do emergency TPHC until unit can re serviced/repaired. Food must remain in approved temperature range (41F and below). Maintain TCS foods in cold holding at 41F or less. I will be back within 3 days to ensure unit is working properly. Use the 4 hour time/documentation method we discussed until the unit has been verified to be working properly. Repeat |
