PIC willingly discarded foods that had been left in unit over night and were out of temperature. Location is going to do emergency TPHC until unit can re serviced/repaired. Food must remain in approved temperature range (41F and below). Maintain TCS foods in cold holding at 41F or less. I will be back within 3 days to ensure unit is working properly. Use the 4 hour time/documentation method we discussed until the unit has been verified to be working properly. Repeat

It was raining during time of inspection and rain was flooding in the back door. Ensure a tight fitting toor to prevent pests and contamination. Replace door. Repeat
