Observed raw chicken cold holding above 41F. Chicken was in bags and was in a cooler of ice. PIC stated that the chicken was brought to them from the commissary during the event. CDI-more ice was added to the chicken to keep cold. EHS advised PIC to have a way for the extra chicken to stay cold when in route to the food truck for events. |
