General CommentsPIC stated that entire tops of prep units and fries were being held on TPHC. PIC procedures state that only sauces, blanched fries, and leaf lettuce are held on TPHC. Ensure that all employees are aware of what items are being held on TPHC and to discard at proper times. All items were voluntarily discarded at 4 hour mark due to PIC stating that entire top of units are flipped. Additionally, some sauces are non-TCS and do not need to be discarded at 4-hours. If you have additional questions, can contact inspector to follow-up.
