General Comment: 3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf - observed 1 large and deep container of alfredo sauce cooling in freezer in deep container. Cooling temperatures were 163 degrees F and 157 degrees F. Operator stated did not have ice wand. CDI, sauce transferred to shallow partially uncovered sheet pans to rapidly cool.
