3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed prepared sushi and poke bowls in grab and go unit prepared at 10:00am cooling while sealed in plastic containers. CDI - PIC moved all items to WIF uncovered to quickly cool. Repeat.
