P Observed five tightly covered 5 gallon buckets of burrito sauce and enchilada sauce and three 5 gallon buckets of black beans all cooling actively in WIC for approx. 5 hrs at 50 degrees. Observed 6" deep tight covered pans of carnitas actively cooling at 48 degrees for approx.5 hrs. Items were un-likely to cool to 41 degrees based on lack of proper cooling methods. See violation #33 for cooling methods. CDI- All actively cooling foods moved to shallow open pans in WIF and observed to have cooled to 41 by 6 hr cooling window. Will make compliance visit to ensure foods are properly cooling with proper cooling procedures. PIC also said they will revise the amount of foods they attempt to cool at one time and stagger the amount of foods cooling throughout the week.

CDI- Reviewed proper cooling methods with PIC. Foods moved to shallow un-covered pans to properly cool.

Observed 3 door fridge with damaged handles and damaged kick plate. 4-502.11 Utensils shall be maintained in good repair. Observed plastic food tubs that are cracked and damaged, need replacing.
