General CommentsDuring inspection observed sourdough starter that was used in house for testing and not used for anything on the menu. PIC stated starter is not used at current location but reused at Albertine locations for their bagels and other baked goods. PIC stated they bought the initial starter three years ago and does not have the invoice for it currently. But they continue to reuse same starter and add to it when it is low or it is no longer “bubbly”. Told PIC they would need an approved variance from the state for the fermentation process of the sourdough starter. Notified PIC they would need to cease process at Albertine locations until further notice and will inform the respective inspectors regarding observation. Observed facility receiving ROP products that are not logged in Cryovac log since it came from Kindred, that shares their HACCP approval. Told PIC to ensure they designate a separate area that has product received from a separate location and the items that are completed in house.
