Observed oil and grease buildup on the sides of the hood system. Observed minor food debris on the floor in hard to reach areas. Observed food residue on sides of cooking equipment and cold holding units.
PIC stated that they have a hood cleaning company that comes once a month to clean.
Increase cleaning frequency to avoid buildup. |
