General CommentsFacility doesn’t use TPHC for fried chicken. chicken is tossed after 4 hour but temps are taken during the 4 hours, temp will have to be at or above 135. Per PIC chicken will not last the 4 hours. Bagged protein toppings for pizza were also discussed. Pizza Hut has a freeze date and thaw date, with a 8 day shelf life after bags are open. Pizza Hut does not count the open date as day one as per food code. PIC made EHS aware that bags of protein will last maybe a day or two due too high volume. EHS and PIC agreed that facility will use an open date on bags of protein.
