General CommentsPIC has been advised that cleaning frequency for all food contact surfaces (knives, cutting boards, bamboo rollers, etc.) is at least every 4 hours. Establishment closes daily after lunch service to clean then reopens for dinner service. Establishment uses TPHC for TCS foods held on prep table in kitchen, for sushi rice, for crab mix, and for tempura held at sushi bar. Start and discard times are tracked using stickers on each item. Written TPHC procedures are kept in folder near cash register. Parasite destruction letters are kept in folder.
