General CommentsEHS observed effective date marking system in place (Items that are cooked/prepared and placed into cold holding are date marked for a day of preparation or removal from frozen storage.) During inspection, EHS observed one (1) bin of cut cabbage, prepared earlier according to PIC, with a date mark of 4/17, placed on it open to allow effective cooling. According to PIC, this lid had been placed on this item in error, as it was meant to be placed on an adjacent item, which had a lid mark of 4/19. As both items were date marked effectively, and neither was beyond 7 days of preparation, date marking is considered effective at time of inspection. Efforts must be made by PIC to verify that each prepared portion of TCS food held for more than 24 hours is date marked accordingly.
