All food not sold by the end of 4 hours shall be discarded. -P/Pf Observed that facility was now holding Ahi, Huacatay, and Roccoto sauces on TPHC in dining areas with no written procedure on site. CDI: EHS provided template and PIC filled out on site. |

3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed quinoa stuffed avocados cooling in covered containers stacked on each other in walk in. EHS instructed PIC to vent lids slightly and unstack to ensure cold air flows around the product. If the items are to be used within a few hours, avocados should have minimal oxidization. CDI: Lids vented. |
